2018 L.A.S Vino Cabernet sauvigon

A wine that has taken five years of thought and a tireless search for the right vineyard. A wine that expresses the essence and beauty of Margaret River while providing something new to the landscape. We wanted to create a truly unique cabernet or nothing at all.

The first time working with this vineyard from Yallingup. A certified organic and biodynamic site at the northern end of the cape. For the previous few years the vineyard had been completely unkept and unpruned with no trellising. The vines sprawl everywhere; as pigs, geese, guineafowl and
cows roam free. The site faces north with a little creek running through the middle of the vineyard. Native flowers and plants grow under the rows with no herbicides or pesticides

sprayed. It is one of only four certified biodynamic vineyards in the region and was one of the first to receive demeter certification

2018 was a vintage to remember. One of the best on record from most of the veterans we talked to. No birds due to a large amount of marri and red gum blossum early in the season and a slow, steady ripening period with minimal rain.

The fruit was hand picked and cooled followed by bunch and berry sorting by hand. This led to to an almost black cavier apparence of fruit in the fermenters. The fruit was naturally fermented in barriques with the head board taken off. Each of the barrels contained a different combination of whole berries, bunches and ferment

temperatures to create complexity and depth in the resulting wine. Once fermentation was complete, we sealed the fruit within the barrels and left it all to mature, rest and develop for 365 days around the sun.

After a year of maceration and maturation the wine was finaly released from barrel and basket pressed to tank to settle naturally prior to bottling.

Winemaking Notes:

Dark rich fruits, mulberry, dark cherry and plum with secondary savoury notes of prune, baking spices and clove. Layers and layers of silky tannin. A wine that can be put down and comes into its own by decanting An eclectic, eccentric and electric wine with a full gamut of notes to tickle the taste buds and stimulate the senses.The vineyard, the year and the unique method of winemaking

has led to wine of incredible richness, complexity and flavour.

Cloudy Bay Pinot Noir

Portuguese varieties in Margaret River are rare. So rare that the 40 year old vineyard that we source fruit from, (which was originally planted to make port), to our knowledge is the only vineyard within the appellation. This is one of the reasons that make it such an interesting and exciting wine to make. The vines are planted on gravelly loam soils on a north east facing slope overlooking Geographe Bay. The blend is comprised of three Portuguese varieties: Touriga Nacional for structure, depth and flavour; Tinta Cao for aroma and finesse; and Souzao for colour and acidity.

The fruit was picked by hand followed by bunch and berry sorting. The individual berries were cold soaked then fermented in open fermenters with regular hand plunging prior to pressing straight to mature oak barriques. The wine matured in oak for 12 months and was blended and left to settle naturally in stainless steel for a further 2 months prior to bottling.

Twenty percent of the wine was matured on skins and berries for 12 months. This extended time on skins gives the wine additional structure, colour, complexity, tannin, and depth in the flavour profile.

Why Pirate blend? Pirates were the outlaws, the one’s who broke the rules , the fighters, the one’s who lust after life with gusto. They drank with a passion that was truly magnificant. For pirates liquor was the saviour; it soothed the heat of the sun and made the dark nights brighter. This blend is an ode to those salty sea dogs we left behind and those still

sailing. Those willing to break the rules and live a life according to nothing but passion and the pursuit of personal desire. The unique bottle shape is a nod to the port varieties used in the blend.

Winemaking Notes:

Ruby red in hue. The wine displays notes of sweet spice, cinnamon, clove, plum compote, blueberry and dark chocolate. Soft silky tannins with an exotic mix of red berry fruit sweetness and cocoa on the palate. Long, complex and an intriguing finish.

The Chenin Blanc Dynamic Blanc (CBDB)

Dynamic: Adjective. 1. (of process or system) characterized by constant change, activity or progress. 2. (of a person) positive in attitude and full of energy and new ideas.

The vines sprawl everywhere and pigs, geese, guineafowl, cows roam free (which was slightly problematic when picking as we found the pigs eating a few of the buckets of grapes). The site faces north with a little creek running through the middle of the vineyard. Native flowers and plants grow under the rows with no herbicides or pesticides sprayed. It is one of only four certified biodynamic vineyards in the region and was one of the first to receive Demeter certification.

The vineyard is dynamic in every sense; biodynamic, characterized by constant change, full of attittude, energy and new ideas and may be a force that stimulates greater change within viticulture. It shouldn’t work, it goes against nearly everything you are taught in viticulture and yet it does work and it’s incredibly exciting making wine from this unique little parcel of land.

Winemaking Notes:

The fruit was hand picked at one time but showed varied levels of ripeness through the vineyard and crop, chilled overnight and hand sorted prior to being lightly cold pressed as whole bunches, very gently over a few hours. The juice was left to naturally settle prior to a wild fermention in a combination of french barriques. (70%) and clay amphora (30%) . No secondary fermentation with fortnightly lees stirring prior to being bottled with no fining and no filtration.

2018 LAS VINO “Willyabrup” Chardonnay

A singular barrel of wine hand bottled exclusively for our friends ‘Lilypad Palm Beach’. “Willyabrup” a subregion known as the jewel in the crown of Margaret River. Located centrally between Cape Leeuwin and Cape Naturalist and home to the best fruit in the region. 

We hand-picked gin-gin clone chardonnay in the early hours of the morning, whole bunch pressed the fruit and naturally fermented the juice in a singular oak barrel. The wine matured in oak for over 13 months with a full malolactic fermentation and regular stirring to develop complexity and body. Hand bottled direct from barrel with no fining or filtration the wine will be slightly cloudy and full of flavour. Enjoy with fresh fish or a selection of cheeses.

Grape Variety: Pinot Noir 50 to 55% , Meunier 15 to 20% , Chardonnay 28 to 33% and reserved wines.

Region: Champagne, France

Serving Suggestion: Ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.

Palate: Golden-yellow Tiny bubbles Veuve Clicquot Yellow Label is immediately pleasing with initial tasting notes of fruit, followed by more discreet aromas of brioche and vanilla when the wine is allowed to age in the bottle. On the palate, Veuve Clicquot Yellow Label reveals a complexity that explodes. Yellow and white fruits Vanilla Toasy (brioche) On the nose, Veuve Clicquot Yellow Label is immediately pleasing with initial notes of fruit, followed by more discreet aromas of brioche and vanilla when the wine is allowed to age in the bottle.

Tasting Notes: Tightly knit, focused by robust acidity and a streak of minerality, this offers subtle notes of white peach, anise, biscuit and kumquat. The refined finish echoes a smoky note. Drink now through 2022.

The Wine Story: Founded in 1772, the Veuve Clicquot House has since lived by its motto, "Only one quality, the finest". "Yellow Label" is its signature champagne, the symbol of the House's art of blending, defining the Veuve Clicquot style through a perfect balance of strength, aromatic intensity, freshness & silkiness. The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Meunier rounds out the blend. Chardonnay adds the elegance and finesse. Grapes from as many as 50 to 60 different Crus go to the blending of Yellow Label. Traditionally, the proportion of each grape variety used is 50 to 55% Pinot Noir, 15 to 20% Meunier and 28 to 33% Chardonnay. Then, to achieve, year on year, the consistency that makes Yellow Label so immediately recognizable, Cellar Master Dominique Demarville will draw on priceless reserve wines for the blend (from 30 to 45%). Created in 1877, more than 140 years ago, the iconic yellow label - now the most recognizable color in Champagne - continues to represent both the House's heritage and its daring audacity.

 

Rosè

2019 L.A.S Vino Pinot Noir Rose

 

Pinot Noir has the ability to make some of the best Rose’s in the world, lighter in colour than regular red grapes, elegant, aromatic with crisp acidity. All the building blocks of great Rose. 

This Pinot Noir was hand-picked from a gentle north facing slope in Willyabrup, Margaret River. Whole bunch pressed and naturally fermented in mature oak barriques. Left to rest and develop in oak for 13 months with a full malolactic fermentation. We added a little chardonnay to the wine at blending to give complexity and character. A 1000 bottle batch of wine from the 2019 vintage. Enjoy with a sunset overlooking water.
